New recipes...

Here are a few 'pumpkin' things I'm enjoying these days. Seeing as I can't have pumpkin pie, these things sure help me get my pumpkin fill, especially this time of year.

Pumpkin Oatmeal:
1/4 c. raw oats
1Tbsp. plain Cream of Wheat (raw)
2 Tbsp. plain canned pumpkin
1/4 tsp. pumpkin pie spice
sweetner of choice (just not white sugar - I use Agave or Truvia)
water

Mix ingredients together in a bowl and add water. Heat in Microwave.


Pumpkin Protein shake:
1 scoop Vanilla Protein Powder
2 Tbsp. canned Pumpkin
1c. Almond Milk (you can use skim milk if you like)
1/4 tsp. Pumpkin Pie Spice
1/3 c. raw oats
1 tsp. Agave Nectar
crushed ice

Blend together until smooth. Enjoy!


I'm enjoying these things. And you know what? I don't even miss the pumpkin pie - seriously!

It's October!

...can't believe it. However I do love me some crisp fall weather; it's invigorating.

My healthy living journey continues and with more of an umph. I'm doing something new, but practically the same as I was doing before; not eating the "whites" or drinking soda. I'm eating clean for the next few months and working out to a specific schedule and plan, and I am so excited for the results. It's been 3 days and I've already lost 3 lbs. :)

Working out has always been hard for me. I mean I enjoy resistance training, not a huge fan of cardio, but of course I always feel great afterward. It was hard because I never had a set thing of what I needed to do, or work on. I'd go for a walk, then come home and lift weights with my dumbbells, do some sit-ups on the exercise ball, maybe a few squats and I'd be done. But never felt like I was getting a really good workout. I HATE going to gyms! Always have! I hate the feeling when I think people are watching me work out, especially being overweight - I feel self conscious.

Well, with this new thing I'm doing I work out at the gym my work has provided the employees. I have a workout buddy and we go everyday and do our specific work out that has been lined out for us. We eat 6 smaller meals a day and at certain times. We also drink 3-4 liters of water a day.

It's hard not feeling completely full. I don't like to feel overly full, but I like to feel satisfied. But, since we're just 3 days into this I'm sure we'll get used to it. I still don't eat sugar or eat those other "whites" (flour, rice, pasta, potato, sugar). I feel good!

Yeah, yesterday I was eyeing these BYU mint brownies that were at my desk for everyone to enjoy - it was hard not to have one especially because I was feeling a bit hungry. But I didn't have one. Yay me!

I really am so excited to see the results of this. I'm excited to have more muscle! You might want to pre-order your tickets now to the gun show...just sayin'...:)

my lifestyle change

It's been so great to get so much response when I post how I'm doing with my diet lifestyle changes. I love the support I get from everyone...so THANK YOU!

I've gotten a lot of questions on what specifically I'm doing to lose weight. I've responded to some people individually but wanted to post on here as well.

The answer is simple, really. I've taken all white sugar, white flour, white pasta, white potato, white rice, and soda out of my diet. And I'm trying to work out regularly (doesn't always happen - infact me not working out happens more than working out - I'm trying to be better on that part)

The other REALLY important part of this, and it's especially important for me as a diabetic, is that I stick to things that are low on the Glycemic Index. This really is a HUGE part of my lifestyle change, and I contribute this to my weight loss.

Why do I stick to the Low Glycemic Index? Well, being a diabetic the last thing you want is to eat something that will spike your blood sugar levels. So what is the Glycemic Index? I found this great explanation online...

"not all carbohydrate foods are created equal, in fact they behave quite differently in our bodies. The glycemic index or GI describes this difference by ranking carbohydrates according to their effect on our blood glucose levels. Choosing low GI carbs - the ones that produce only small fluctuations in our blood glucose and insulin levels - is the secret to long-term health reducing your risk of heart disease and diabetes and is the key to sustainable weight loss."

  • Low GI diets help people lose and manage weight
  • Low GI diets increase the body's sensitivity to insulin
  • Low GI carbs improve diabetes management
  • Low GI carbs reduce the risk of heart disease
  • Low GI carbs improve blood cholesterol levels
  • Low GI carbs can help you manage the symptoms of PCOS
  • Low GI carbs reduce hunger and keep you fuller for longer
  • Low GI carbs prolong physical endurance

This is what has worked for me, being a diabetic, but I TRULY, TRULY believe this can help EVERYONE who would like to maintain a healthy lifestyle, or those who would like to lose weight.

So the big question is...what are the foods on the low GI? Click here to see the High, Medium and Low GI foods. Red is the highest, Green is the lowest.When I first started I had that whole list, high, medium and low at my desk and at home so that I could refer to it each day when I was figuring out what I should be eating. I even printed it out and gave it to a co-worker who was interested in it. This list has been a saving grace for me throughout this process. I completely stay away from the reds (high GI), sometimes eat things from the orange (medium GI), but mostly base all my meal planning around the greens (Low GI).

Another question is what do I eat from the low GI, what kinds of meals have I made? I'm just going to kind of list some things that are on the low GI list that we eat and love.

-Quinoa: (35 on the low GI) We eat this in place of Rice. I was a huge sticky rice fan; growing up in Hawaii it was a staple in our house. Quinoa is packed with Protein and so good for you! I cook this in my rice cooker, just like rice. It takes on whatever flavors you put with it. So, I like to add minced Garlic (I like me some Garlic). I make Turkey Chops, simmer with Cream of Mushroom soup, water and 2 tbsp Dijon Mustard, and then lay over a bed of Quinoa. SO GOOD!

-Dark Chocolate (at least 70% cocoa content) 25 on the low GI: . This is my treat if I feel that I need some chocolate. I love Dark Chocolate anyway, but I really love dark, dark chocolate. I bought these sugar free dark chocolate covered almonds (almonds are really low too) from the Good Earth and HOLY MOLY they are divine!!! The brand is called 'Amberlyn'. They're in the Sugar Free Isle.

-Avocados (10 on the low GI): I have been eating so much of this! Ryan isn't a fan of them, but he's been kind enough to buy me 'Wholly Guacamole' from the store so I can get my Guac. fix.

-Fruits: Now you'll notice that not all fruits are low on the GI. That's why not all fruits are the best for Diabetics. The fruits that are the absolute best are found here and here. These are my favorites, along with Pears and Nectarines. Also when I make a smoothie I do add about 1/3 - 1/2 of a banana..which is on the medium list, but it's not terrible for me in small quantities.


-Wasa brand crackers and Hummus: One of my favorite snacks. Wasa crackers are from Sweden, but you can buy them anywhere (walmart, smiths, harmons...anywhere). I get the roasted red pepper hummus, slather it on the cracker, and add a slice of turkey for extra protein, and maybe a slice of cheese. I'll top it off with some raw spinach - so good!

-Almond Milk: I've traded in regular skim milk for Almond Milk. I just like that I'm getting better protein, and again Almonds are low on the GI. Plus I've got Animal Milk allergies (as does my whole family) so I stick to Almond Milk.

-Agave Nectar: My new favorite way to sweeten things. When I first found out I had Diabetes Ryan went out and bought a big bag of Splenda to use in place of sugar. I think I've used maybe 1 cup of it in 3 months. I just don't use it. I'll probably start using more of it come fall time when I really start baking. But I prefer to use Agave Nectar instead. It has the consistency of honey, but so much better for you. I made a flourless chocolate torte with it, and it was so good! I put it in my PB smoothies as well.

One thing that has totally changed since changing my eating habits, is that I crave meat...like red meat. I have never been a red meat eater....ever! We didn't eat steaks or things like that growing up, it was always chicken or turkey. But now I can't get enough. I don't eat it all the time, but at the most, once a month (maybe twice), Ryan and I will go to Rodizio Grill and I will get my fill of red meat for the month...lol! It's so funny when I tell Ryan I need meat, I've never been that way. But I guess it's my body telling me what I need. :)

I do still have a weakness of eating chips and salsa. I make my own salsa and it's another thing I can't get enough of. We buy corn tortilla chips (medium GI) and that is my treat some days when I need a little something.

so it's been a while...

Well hi there dear blog! Yes, it's been almost a month since you've been updated. Time to get to it, right?

Things have been going really great with the weightloss. I was at a stand still for a few weeks where I wasn't losing hardly anything; maybe like a lb a week or less. But all of the sudden things are picking up and fast! It's exciting! This week alone I've lost 5 lbs. in 4 days. For a total of 35 lbs lost from my highest weight and 24 lbs lost since doing the no sugar thing. Not too shabby! My goal was to lose 30 lbs. before I go back to my Dr. in October. I'm almost there! YAY!

Last Saturday Ryan and I were at Costco about to buy the Jack LaLaine Juicer. We put it in our cart and continued on with shopping. On our way to checkout we stopped at the demo they have for the Blendtec. He hadn't started yet, but I told him I was interested in seeing how this thing worked. Ryan says to him, "yeah, and we've got your competition right here in our cart!" The guy laughed and talked to us a bit before starting the demo. He mentioned that some juicers will juice the fruits and veggies but then get rid of the left over. In most cases those left over parts are the most important parts, as they contain the fiber. Otherwise you'd just be drinking the sugar part in fruits. He mentioned that for Diabetics it's not good to just have the sugar part, but need the fiber most of all. Ding, ding, ding!! That was the magic phrase for me and Ryan, since I'm a diabetic.

He started his demo, people gathered around in awe of this magical blender - we were in awe as well. We sampled his tasty treats, soup, and watched as he ground up wheat. Amazing! I knew Ryan was hooked when he said, "do you want this instead of the juicer?" and "what color do you want?", since it comes in 3 different colors. "I'll take the black one", I said.

We went home and I made a green smoothie right away. I mean, we had just purchased a monster bag of Spinach...I needed to start using it.

That night I made taco soup in the blender...and it warmed it up as well. YUM! I'm a huge advocate for getting this blender. It's nice to make healthy things and not worry about MSG and all those added things. But to know that I'm putting in whole veggies and making a delicious meal.

I've had a lot of people ask me about my green smoothie recipe, and the Peanut Butter Smoothie (to die for) recipe. Here they are...


Here's a recipe I've been doing each morning for my juicing/smoothies...

Green juice/smoothie: (this can vary depending what fruit I have in the fridge)


12 oz. XANGO juice (I use that because I get it free, but you can use water)
1 whole Asian Pear
1 whole Nectarine (take out the seed)
1/2 banana
1/2 c. Frozen Blueberries
4 huge handfuls of raw Spinach
1/2 c. crushed ice
1 TBSP Flaxseed Oil *

This makes about 32 oz. of yummy goodness...and I drink it all!

*If you drink this everyday, watch out for the flaxseed oil. It will make you have the runs. Try adding it in every other day.


Peanut Butter Smoothie:
I don't usually measure things so this is a guesstimate. (I'm so like my Mother)

12 oz. Almond Milk
1/4-1/2 cup PB (I use the natural kind)
1 TBSP. Agave Nectar
1 TBSP. Flaxseed oil*
1/3-1/2 of a banana
1 tsp. Cocoa power (the kind you bake with)
1/2c. oats
1c. crushed ice

This should make at least enough for 4 people to enjoy. It's soooo good!!!!

*If you drink this everyday, watch out for the flaxseed oil. It will make you have the runs. Try adding it in every other day.

5k

August 9th was my 34th birthday. Since I've been working on my health and becoming healthier I decided that for my birthday this year and every year to come I wanted to do something hard, something challenging. For my 34th b-day I decided that a 5k was a good start. We would do it a few days before my birthday, August 6th, in the evening.

I let all my family know about it and wanted as many of them as possible to join me, not just in the 5k but in the quest to becoming healthier. They agreed. I was happy!

The day before the 5k, I was reminded about a photo shoot I had previously scheduled. Oops! So, the 5k plans had to be moved. However life got busy and I didn't think about it much, until this past weekend. Sharon (my sis-in-law) sent me a text that said "we should do the 5k on labor day". Perfect!

So, we did it. But unfortunately not everyone could make it on short notice. So, It was just me and Sharon. Ryan and my nephew Aidan rode on their bikes together while we ran.

I gotta say, it was hard. I hadn't trained for this AT ALL! Mentally I was ready, but physically I wasn't.  But I did it. Sharon pushed me and told me to keep going when it got hard. She kept saying things like, "keep going all the way to the light and then we'll walk for a little bit". I'd then focus on that light and reaching that little goal, and reach other goals along the way. She was a great running partner.

We finished in 39 minutes. Not great for those other natural runners, or those who prepare more, but it was so much better then I have ever done. I did two 5k's at my work, two years in a row and both times I was around 50 minutes. So, although it averaged out to be 13 minute miles I was proud of myself.

I've known this for a few months now, but I realized it even more today... I CAN DO HARD THINGS. I really can! We all can if we put our heart and mind to it.

I found this quote on Pinterest that I really love..."if it is important to you, you will find a way. If not, you'll find an excuse." I have always found an excuse for things in my life, and I finally feel like that was the old me...but this is me now... I CAN DO HARD THINGS. I CAN DO CHALLENGING THINGS. And I do them because it's important to me, and I will find a way.

I'm excited for the many other 5k's to come, and someday and half marathon, and a Ragnar or two. The possibilities are endless.

Now, I just need some ibuprofen and a good ice bath. I hurt.

Happyness

I'm happy. I'm in a good place and I'm happy. I'm happy to not eat sugar, I'm happy to not drink soda, I'm happy to not eat the other evil "white" things. I'm happy.

Even if you eat some decadent sugary, floury thing in front of me...I'm still happy to not eat it. And THAT my friends makes me happy. :)

WOOHOO!

So, that 6 week trial is over. They pricked my finger, drew some blood, put it through a cool little machine and voila, out came my stats. And man, was I happy!!

Weight loss: 15 lbs.
Body Fat: Down 1% (It should have been more...but I didn't exercise all that much like I should have)
Triglycerides: Down quite a bit. Now in the normal range.
Good Cholesterol: Up by 6 points
Bad Cholesterol: Down by like 30 points, I'm now in the normal range
Blood Sugar: It read a little high today because I hadn't eaten, nor taken my meds...but it was still down by about 100 points.

Overall I'm quite pleased.
