Here are a few 'pumpkin' things I'm enjoying these days. Seeing as I can't have pumpkin pie, these things sure help me get my pumpkin fill, especially this time of year.
Pumpkin Oatmeal:
1/4 c. raw oats
1Tbsp. plain Cream of Wheat (raw)
2 Tbsp. plain canned pumpkin
1/4 tsp. pumpkin pie spice
sweetner of choice (just not white sugar - I use Agave or Truvia)
water
Mix ingredients together in a bowl and add water. Heat in Microwave.
Pumpkin Protein shake:
1 scoop Vanilla Protein Powder
2 Tbsp. canned Pumpkin
1c. Almond Milk (you can use skim milk if you like)
1/4 tsp. Pumpkin Pie Spice
1/3 c. raw oats
1 tsp. Agave Nectar
crushed ice
Blend together until smooth. Enjoy!
I'm enjoying these things. And you know what? I don't even miss the pumpkin pie - seriously!
